Buttermilk

The sour liquid that remains after the butterfat has been removed from whole milk or cream by churning.

Substitution for 1 cup buttermilk:

1 1/2 tablespoon lemon juice
1 cup milk

Stir well, and allow the mixture to set for a bit and thicken.
