Whole Grain Pizza Dough

Pizza dough made with whole grains that is high in fiber.

Original recipe serves 12.

Ingredients

1 1/2 cups whole wheat flour
4 teaspoons gluten
1/4 cup buckwheat flour
1 tablespoon honey
1 1/2 teaspoons salt
2 1/4 teaspoons yeast ; active dry
1 cup water ; warm
1/4 cup soy flour

Preparation:

In a large bowl, dissolve the honey in the warm water, and let it sit for about 7 minutes. Add the flours, gluten, and salt, combining well. Knead the dough for 5 minutes and place in a large bowl sprayed with non-stick cooking spray. Allow it to rise for 45 minutes. Preheat oven to 450F (230C). Punch down and divide in half into two balls. Roll out each ball and place on a pizza pan lightly greased with cooking spray. Bake for 5 minutes. Remove finished pizza crust from oven. Add toppings and bake another 15 minutes or until pizza is done.
