A flavorful, mediterranean-style chicken salad

Ingredients (serves 4)

  • 1 cup carrots ; chopped
  • 1/2 head iceberg lettuce ; broken up
  • 3 cloves garlic ; chopped
  • 1 pound chicken ; cut into bite sized pieces
  • 8 ounces feta cheese ; crumbled
  • 3 tablespoons olive oil
  • 2 green bell pepper ; chopped
  • 1/2 cup chickpeas
  • 1 cup Italian dressing ; or to taste

  • Directions

    Heat oil in a large skillet and saute the chicken until done. Allow chicken to cool, and then combine remaining ingredients into a large bowl. Add other vegetables if desired.

    This is pretty good. It's a light meal, so make something else with it if you are really hungry :)
