Ingredients (serves 6)

  • 1 tablespoon rosemary ; fresh
  • 2 tablespoons olive oil
  • 1 teaspoon thyme ; fresh
  • 2 cloves garlic ; crushed
  • 1 pinch cayenne pepper
  • 1 pinch sea salt
  • 6 lamb chops ; 3/4 inch thick

  • You will also need: grill, food processor


    1. Combine thyme, rosemary, salt, garlic, and cayenne in a food processor and pulse until combined.
    2. Add the olive oil and pulse until a paste forms.
    3. Coat each side of each lamb chop with the herb mixture. Place in a dish, cover and refrigerate for 1 hour.
    4. Remove the marinated lamb chops from the refrigerator and bring it to room temperature, about 20 minutes.
    5. Preheat a grill pan to high heat.
    6. Add the lamb chops and sear for 2 minutes. Flip them over and cook for 3 to 3 1/2 minutes until desired donenness.
