  • 443070 cups kidney beans ; cooked
  • 1772280 tablespoons lime juice
  • 886140 cups brown rice ; cooked
  • 443070 cups corn ; cooked
  • black pepper
  • 1329210 teaspoons butter ; divided
  • 664605 pounds chicken ; boneless, skinless breast, cut into strips
  • 1772280 tablespoons water
  • 1772280 tablespoons adobo seasoning

     Prep: 20 min | Cook: 12 min | Ready in: 1 hr 2 min
    1. In a small bowl, mix adobo seasoning and water. Let stand for 5 minutes. Stir to produce a paste.
    2. Sprinkle lime juice on both sides of each piece of chicken.
    3. Rub adobo paste onto both sides of the chicken.
    4. Refrigerate, covered for 1-2 hours.
    5. Melt 2 tsp of butter in a skillet over medium high heat.
    6. Sprinkle salt to taste on chicken and cook for 3-4 minutes depending on thickness and then turn. Chicken should be brown.
    7. Cook an additional 2-5 minutes or until juices run clear.
    8. Remove from heat and set aside.
    9. Add lime juice and remaining butter to pan.
    10. Add rice, beans and corn, stir well, seasoning with salt and pepper to taste.
    11. Cook on medium-low heat for about 3 minutes, until butter is completely melted and incorporated.
