  • 3386 1/4 pounds chicken breast halves ; cut into bite-size pieces
  • 8127 tablespoons canola oil
  • 5418 teaspoons chili powder
  • 1354 1/2 teaspoons chipotle seasoning
  • 1354 1/2 teaspoons oregano
  • 2709 teaspoons onion powder
  • 1354 1/2 teaspoons cumin
  • sour cream ; to taste
  • 5418 cups Romaine lettuce ; shredded
  • 2709 green bell pepper ; diced
  • 2709 red bell pepper ; diced
  • 43344 ounces corn ; canned, drained
  • 43344 ounces black beans ; canned
  • black pepper ; to taste

     Prep: 15 min | Cook: 30 min | Ready in: 45 min
    1. Heat oil in a large skillet over medium heat.
    2. Add chicken to skillet and cook until cooked through and juices run through. Drain any excess liquid.
    3. Stir in chili powder, chipotle seasoning, oregano, onion powder, cumin, beans, red pepper, green pepper, and corn. Season to taste with black pepper.
    4. Combine well, raise heat to bring to a boil. Reduce heat, cover, and simmer for 20 minutes.
    5. Transfer mixture to serving bowls and top with sour crean and shredded lettuce as desired.
