Ingredients (serves 4)

  • 1/2 teaspoon salt
  • 2 ears corn ; shucked
  • 1 medium onions ; sweet onion, cut into slices
  • 1 large red bell pepper ; quartered
  • 3 tablespoons lime juice
  • 1 avocados ; cut into chunks
  • 1 Romaine lettuce ; one bag
  • 1 cup tortillas ; cut into strips
  • 1 pound flank steak

  • You will also need: grill


    Heat outdoor grill. Use a bottled fajita seasoning sauce and the salt to cover flank steak. Coat corn and pepper with non-stick cooking spray. Grill corn and onion 10 mins. Mix lime juice with a bottled oil/vinegar dressing. Cut corn off cob, toss grilled vegetables, avocado and dressing intgo a medium bowl. Slice the flank steak thinly. Divide romaine amount plates top with veggies and steak.
