Ingredients (serves 8)

  • 1 1/2 cups sugar
  • vanilla extract ; or grated lemon rind
  • 1/4 stick butter
  • 4 egg(s) ; separated, room temp
  • 2 cups all-purpose flour
  • 3/4 cup milk
  • 2 teaspoons baking powder
  • 1 tablespoon Rum

  • Directions

    Cream together butter, egg yolks and sugar until smooth with an electric beater. Add other ingredients, little by little. Keep beating. Beat egg whites until stiff and fold into batter. Pour into buttered loaf pan and bake at 350 F for 50-60 minutes.
