Ingredients (serves 4)

  • 2 pounds sweet potatoes ; peeled and cubed
  • 1 medium onions ; chopped
  • 4 cloves garlic ; chopped
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon cloves ; ground
  • 1 teaspoon ginger
  • 4 cups chicken broth
  • 2 whole chipotle pepper ; in adobo sauce, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • salt ; to taste
  • black pepper ; to taste
  • 1/2 teaspoon oregano

  • Directions

    Heat oil in a large pot over medium heat.  Add onion and garlic, cooking until tender, about 5 minutes.

    Add all remaining ingredients except the lime juice.

    Bring to a boil. Reduce to a simmer. Cover, and simmer for 20 minutes or until sweet potato becomes tender.

    Remove from heat and allow to cool for a bit.  Working in batches, add soup to a blender and blend until pureed and smooth.

    Return soup to the pot and stir in the lime juice.

    Season to taste with salt and pepper. Serve with a dollop of sour cream, if desired.
