A spicy soup made with sweet potatoes. Serve with a dollop of sour cream
Ingredients (serves 4)
Add all remaining ingredients except the lime juice.
Bring to a boil. Reduce to a simmer. Cover, and simmer for 20 minutes or until sweet potato becomes tender.
Remove from heat and allow to cool for a bit. Working in batches, add soup to a blender and blend until pureed and smooth.
Return soup to the pot and stir in the lime juice.
Season to taste with salt and pepper. Serve with a dollop of sour cream, if desired.
