  • 267840 ounces pineapples ; can of chunks, undrained
  • 13392 pounds chicken ; 4 boneless, skinless breasts
  • 40176 tablespoons cilantro ; fresh, chopped
  • 6696 medium green bell pepper ; chopped
  • 6696 cups red bell pepper ; chopped
  • 53568 cups brown rice ; cooked (2 cups uncooked)

     Prep: 15 min | Cook: 20 min | Ready in: 35 min
    1. Spray a large skillet with nonstick cooking spray. Brown chicken breasts on both sides, cooking until no longer pink inside, about 20 minutes, turning halfway through cooking.
    2. Combine remaining ingredients except cooked rice in a small bowl. Toss to mix.
    3. Place chicken on a bed of brown rice, and top with pineapple mixture.
