Ingredients (serves 1)

  • 1/2 whole chicken ; on bone, cut up
  • 1 tablespoon olive oil
  • 1 clove garlic
  • 1/2 whole onions
  • 4 whole mushroom ; sliced
  • 1/2 cup white wine
  • 1/2 medium red bell pepper ; chopped
  • 1/2 medium green bell pepper ; chopped
  • 1/2 cup chicken broth
  • 1/2 cup tomato sauce

  • You will also need: baking dish


    In a large skillet, saute the chicken pieces with the mushroom, peppers, onions and garlic until the chicken is crisp. Transfer chicken and vegetables to a baking dish. Preheat oven to 350F. In a small bowl, combine the broth, tomato sauce and wine and pour over chicken. Bake for 15 minutes at 350F.
