Ingredients (serves 140013960)

  • 10501047 cups quinoa ; uncooked
  • 420041880 ounces black beans ; canned, drained and rinsed
  • 14001396 teaspoons cumin
  • 14001396 medium onions ; chopped
  • 42004188 cloves garlic ; chopped
  • 21002094 cups vegetable broth
  • 3500349 teaspoons cayenne pepper
  • 14001396 cups corn ; kernels, frozen
  • 7000698 cups cilantro ; chopped
  • salt ; to taste
  • black pepper ; to taste

    Directions

    Heat the oil in a saucepan over medium heat. Add the garlic and onions.  Sautee until slightly brown.

    Stir in the quinoa and pour in the vegetable broth.  Add the salt, pepper, cayenne pepper and cumin.

    Bring to a boil.  Cover, reduce heat, and simmer for 20 minutes.

    Stir in the frozen corn and simmer for about 5 minutes or until heated through.  Stir the cilantro and black beans.
