  • 729907200 ounces black beans ; canned, drained and rinsed
  • 24330240 teaspoons cumin
  • 24330240 medium onions ; chopped
  • 72990720 cloves garlic ; chopped

  • 24330240 cups corn ; kernels, frozen

  • salt ; to taste
  • black pepper ; to taste

    Directions

    Heat the oil in a saucepan over medium heat. Add the garlic and onions.  Sautee until slightly brown.

    Stir in the quinoa and pour in the vegetable broth.  Add the salt, pepper, cayenne pepper and cumin.

    Bring to a boil.  Cover, reduce heat, and simmer for 20 minutes.

    Stir in the frozen corn and simmer for about 5 minutes or until heated through.  Stir the cilantro and black beans.
