Ingredients (serves 314850240)

  • 944550720 ounces black beans ; canned, drained and rinsed
  • 31485024 teaspoons cumin
  • 31485024 medium onions ; chopped
  • 94455072 cloves garlic ; chopped
  • 47227536 cups vegetable broth
  • 7871256 teaspoons cayenne pepper
  • 31485024 cups corn ; kernels, frozen
  • 15742512 cups cilantro ; chopped
  • salt ; to taste
  • black pepper ; to taste

    Directions

    Heat the oil in a saucepan over medium heat. Add the garlic and onions.  Sautee until slightly brown.

    Stir in the quinoa and pour in the vegetable broth.  Add the salt, pepper, cayenne pepper and cumin.

    Bring to a boil.  Cover, reduce heat, and simmer for 20 minutes.

    Stir in the frozen corn and simmer for about 5 minutes or until heated through.  Stir the cilantro and black beans.
