Ingredients (serves 43740)

  • 3280 1/2 cups quinoa ; uncooked
  • 131220 ounces black beans ; canned, drained and rinsed
  • 4374 teaspoons cumin
  • 4374 medium onions ; chopped
  • 13122 cloves garlic ; chopped
  • 6561 cups vegetable broth
  • 1093 1/2 teaspoons cayenne pepper
  • 4374 cups corn ; kernels, frozen
  • 2187 cups cilantro ; chopped
  • salt ; to taste
  • black pepper ; to taste
  • 4374 teaspoons vegetable oil

    Directions

    Heat the oil in a saucepan over medium heat. Add the garlic and onions.  Sautee until slightly brown.

    Stir in the quinoa and pour in the vegetable broth.  Add the salt, pepper, cayenne pepper and cumin.

    Bring to a boil.  Cover, reduce heat, and simmer for 20 minutes.

    Stir in the frozen corn and simmer for about 5 minutes or until heated through.  Stir the cilantro and black beans.
