  • 298860840 ounces black beans ; canned, drained and rinsed
  • 9962028 teaspoons cumin
  • 9962028 medium onions ; chopped
  • 29886084 cloves garlic ; chopped
  • 14943042 cups vegetable broth
  • 2490507 teaspoons cayenne pepper
  • 9962028 cups corn ; kernels, frozen
  • 4981014 cups cilantro ; chopped
  • salt ; to taste
  • black pepper ; to taste

    Directions

    Heat the oil in a saucepan over medium heat. Add the garlic and onions.  Sautee until slightly brown.

    Stir in the quinoa and pour in the vegetable broth.  Add the salt, pepper, cayenne pepper and cumin.

    Bring to a boil.  Cover, reduce heat, and simmer for 20 minutes.

    Stir in the frozen corn and simmer for about 5 minutes or until heated through.  Stir the cilantro and black beans.
