Ingredients (serves 16)

½ 2x 3x Reset

  • 4 cloves garlic ; minced
  • salt ; enough to taste
  • 2 onions ; red, sliced
  • 1 cup orange juice
  • 4 pounds chicken
  • 4 tablespoons lemon juice
  • black pepper ; enough to taste
  • 6 tablespoons olive oil
  • 4 tablespoons honey
  • 4 tablespoons lime juice

  • Directions

    Heat oil in a skillet over medium-high heat. Add chicken and stir until browned. Season as needed with salt and pepper. About 10 min. Remove and put in serving dish. Add garlic and onion to skillet until the onion is softened slightly, about 3 mins. Stir in the orange juice, lemon juice, lime juice and honey cook only until the honey has completely dissolved, about 30 seconds. Pour onion-citrus mix over chicken and serve it up. Total cooking time appx. 20 min. :o )

    Was pretty easy to make. Served with a baked potato it was a quick dinner.

    Pretty good! The honey seems to offset the acidity of the juices and brings out the flavor. This went great with brown rice on the side.
