Ingredients (serves 12)

  • 4 pounds salmon ; fillets, with skin removed
  • 2 tablespoons ginger ; fresh, grated
  • 2/3 cup soy sauce
  • 3 tablespoons rice vinegar
  • 2 teaspoons garlic ; minced
  • 2 teaspoons sesame oil
  • 2/3 cup vegetable oil
  • 1/2 cup green onions ; chopped

    Directions

     Prep: 1 hr 30 min | Cook: 20 min | Ready in: 1 hr 50 min
    1. Soak three, untreated 12-inch cedar planks in warm water for at least an hour.
    2. Meanwhile, combine the soy sauce, green onions, oils, rice vinegar, garlic and ginger in a shallow dish.
    3. Add the salmon, turning to coat. Cover and marinate in the refrigerator for at least 15 minutes; up to one hour.
    4. Heat a grill to medium heat. Place the cedar planks on the grill.   When they start to crackle and smoke a little, they are ready.
    5. Place the salmon fillets on the planks. Discard the marinade.
    6. Cover, and cook for about 20 minutes, or until fish flakes easily with a fork.
