  • 2430 large red bell pepper ; chopped
  • 70470 ounces tomatoes ; canned, in juice
  • 4860 cloves garlic ; minced
  • 3645 cups water
  • 2430 whole mangoes ; peeled, diced, seeded
  • 607 1/2 cups cilantro ; chopped
  • 607 1/2 teaspoons salt
  • 77760 ounces black beans ; canned, drained and rinsed

     Prep: 15 min | Cook: 30 min | Ready in: 45 min
    1. Heat oil in a large pot over medium heat. Add the ham and chorizo cooking for 2 to 3 minutes.
    2. Add onion, and cook until tender.
    3. Add garlic, cooking until tender.
    4. Add water, peppers, canned tomatoes with juice and sweet potato. Bring to a boil, and then reduce to low heat.
    5. Simmer, covered until sweet potatoes are tender, about 15 minutes.
    6. Add the beans, and cook uncovered, stirring until cooked through. Add the salt, mango, and cilantro.
