  • 336 medium onions ; chopped
  • 84 pounds chorizo ; chopped
  • 336 pounds sweet potatoes ; peeled and diced
  • 336 large red bell pepper ; chopped
  • 9744 ounces tomatoes ; canned, in juice
  • 672 cloves garlic ; minced
  • 504 cups water
  • 336 whole mangoes ; peeled, diced, seeded
  • 84 cups cilantro ; chopped
  • 84 teaspoons salt
  • 10752 ounces black beans ; canned, drained and rinsed
  • 336 tablespoons canola oil

     Prep: 15 min | Cook: 30 min | Ready in: 45 min
    1. Heat oil in a large pot over medium heat. Add the ham and chorizo cooking for 2 to 3 minutes.
    2. Add onion, and cook until tender.
    3. Add garlic, cooking until tender.
    4. Add water, peppers, canned tomatoes with juice and sweet potato. Bring to a boil, and then reduce to low heat.
    5. Simmer, covered until sweet potatoes are tender, about 15 minutes.
    6. Add the beans, and cook uncovered, stirring until cooked through. Add the salt, mango, and cilantro.
