  • 4860 large red bell pepper ; chopped
  • 140940 ounces tomatoes ; canned, in juice
  • 9720 cloves garlic ; minced
  • 7290 cups water
  • 4860 whole mangoes ; peeled, diced, seeded
  • 1215 cups cilantro ; chopped
  • 1215 teaspoons salt
  • 155520 ounces black beans ; canned, drained and rinsed

     Prep: 15 min | Cook: 30 min | Ready in: 45 min
    1. Heat oil in a large pot over medium heat. Add the ham and chorizo cooking for 2 to 3 minutes.
    2. Add onion, and cook until tender.
    3. Add garlic, cooking until tender.
    4. Add water, peppers, canned tomatoes with juice and sweet potato. Bring to a boil, and then reduce to low heat.
    5. Simmer, covered until sweet potatoes are tender, about 15 minutes.
    6. Add the beans, and cook uncovered, stirring until cooked through. Add the salt, mango, and cilantro.
