  • 768 pounds sweet potatoes ; peeled and diced
  • 768 large red bell pepper ; chopped
  • 22272 ounces tomatoes ; canned, in juice
  • 1536 cloves garlic ; minced
  • 1152 cups water
  • 768 whole mangoes ; peeled, diced, seeded
  • 192 cups cilantro ; chopped
  • 192 teaspoons salt
  • 24576 ounces black beans ; canned, drained and rinsed

     Prep: 15 min | Cook: 30 min | Ready in: 45 min
    1. Heat oil in a large pot over medium heat. Add the ham and chorizo cooking for 2 to 3 minutes.
    2. Add onion, and cook until tender.
    3. Add garlic, cooking until tender.
    4. Add water, peppers, canned tomatoes with juice and sweet potato. Bring to a boil, and then reduce to low heat.
    5. Simmer, covered until sweet potatoes are tender, about 15 minutes.
    6. Add the beans, and cook uncovered, stirring until cooked through. Add the salt, mango, and cilantro.
