  • 972 medium onions ; chopped
  • 243 pounds chorizo ; chopped
  • 972 pounds sweet potatoes ; peeled and diced
  • 972 large red bell pepper ; chopped
  • 28188 ounces tomatoes ; canned, in juice
  • 1944 cloves garlic ; minced
  • 1458 cups water
  • 972 whole mangoes ; peeled, diced, seeded
  • 243 cups cilantro ; chopped
  • 243 teaspoons salt
  • 31104 ounces black beans ; canned, drained and rinsed

     Prep: 15 min | Cook: 30 min | Ready in: 45 min
    1. Heat oil in a large pot over medium heat. Add the ham and chorizo cooking for 2 to 3 minutes.
    2. Add onion, and cook until tender.
    3. Add garlic, cooking until tender.
    4. Add water, peppers, canned tomatoes with juice and sweet potato. Bring to a boil, and then reduce to low heat.
    5. Simmer, covered until sweet potatoes are tender, about 15 minutes.
    6. Add the beans, and cook uncovered, stirring until cooked through. Add the salt, mango, and cilantro.
