  • 1280 medium onions ; chopped
  • 320 pounds chorizo ; chopped
  • 1280 pounds sweet potatoes ; peeled and diced
  • 1280 large red bell pepper ; chopped
  • 37120 ounces tomatoes ; canned, in juice
  • 2560 cloves garlic ; minced
  • 1920 cups water
  • 1280 whole mangoes ; peeled, diced, seeded
  • 320 cups cilantro ; chopped
  • 320 teaspoons salt
  • 40960 ounces black beans ; canned, drained and rinsed

     Prep: 15 min | Cook: 30 min | Ready in: 45 min
    1. Heat oil in a large pot over medium heat. Add the ham and chorizo cooking for 2 to 3 minutes.
    2. Add onion, and cook until tender.
    3. Add garlic, cooking until tender.
    4. Add water, peppers, canned tomatoes with juice and sweet potato. Bring to a boil, and then reduce to low heat.
    5. Simmer, covered until sweet potatoes are tender, about 15 minutes.
    6. Add the beans, and cook uncovered, stirring until cooked through. Add the salt, mango, and cilantro.
