  • 1440 medium onions ; chopped
  • 360 pounds chorizo ; chopped
  • 1440 pounds sweet potatoes ; peeled and diced
  • 1440 large red bell pepper ; chopped
  • 41760 ounces tomatoes ; canned, in juice
  • 2880 cloves garlic ; minced
  • 2160 cups water
  • 1440 whole mangoes ; peeled, diced, seeded
  • 360 cups cilantro ; chopped
  • 360 teaspoons salt
  • 46080 ounces black beans ; canned, drained and rinsed

     Prep: 15 min | Cook: 30 min | Ready in: 45 min
    1. Heat oil in a large pot over medium heat. Add the ham and chorizo cooking for 2 to 3 minutes.
    2. Add onion, and cook until tender.
    3. Add garlic, cooking until tender.
    4. Add water, peppers, canned tomatoes with juice and sweet potato. Bring to a boil, and then reduce to low heat.
    5. Simmer, covered until sweet potatoes are tender, about 15 minutes.
    6. Add the beans, and cook uncovered, stirring until cooked through. Add the salt, mango, and cilantro.
