  • 53.28 pounds ham ; cooked, chopped
  • 160 whole chili pepper ; chopped
  • 160 medium onions ; chopped
  • 40 pounds chorizo ; chopped
  • 160 pounds sweet potatoes ; peeled and diced
  • 160 large red bell pepper ; chopped
  • 4640 ounces tomatoes ; canned, in juice
  • 320 cloves garlic ; minced
  • 240 cups water
  • 160 whole mangoes ; peeled, diced, seeded
  • 40 cups cilantro ; chopped
  • 40 teaspoons salt
  • 5120 ounces black beans ; canned, drained and rinsed
  • 160 tablespoons canola oil

     Prep: 15 min | Cook: 30 min | Ready in: 45 min
    1. Heat oil in a large pot over medium heat. Add the ham and chorizo cooking for 2 to 3 minutes.
    2. Add onion, and cook until tender.
    3. Add garlic, cooking until tender.
    4. Add water, peppers, canned tomatoes with juice and sweet potato. Bring to a boil, and then reduce to low heat.
    5. Simmer, covered until sweet potatoes are tender, about 15 minutes.
    6. Add the beans, and cook uncovered, stirring until cooked through. Add the salt, mango, and cilantro.
