Ingredients (serves 16200)

  • 6075 pounds beef ; cubed
  • 12150 tablespoons vegetable oil
  • 8100 cloves garlic ; minced
  • 16200 cups beef broth
  • 1012 1/2 cups tomato paste
  • 4050 medium onions ; chopped
  • 32400 ounces carrots ; sliced
  • 16200 ounces mushroom
  • 8100 tablespoons thyme
  • 20250 tablespoons all-purpose flour

    Directions

    Roll beef cubes in flour to coat. Season with salt and pepper to taste. In a Dutch oven, heat oil over medium heat. Add meat and brown on all sides. Drain fat. Add the tomato paste, garlic and broth. Bring to boiling, reduce heat, cover and simmer to 1 to 1 1/2 hours. Add vegetables, and season to taste with additional salt and pepper. Cover and simmer for an additional 30 minutes or until vegetables are tender.
