Ingredients (serves 8)

  • 4 cups couscous
  • 2 cups tomatoes ; diced
  • 2 cups chickpeas
  • 4 teaspoons Italian seasoning
  • 1 teaspoon black pepper
  • 16 large red bell pepper
  • 2 pounds beef
  • 4 tablespoons shallots ; chopped
  • 1 cup feta cheese

    Directions

    Preheat oven to 350 degrees. Lightly grease a 9x9 inch baking dish. In a large bowl combine cooked couscous, tomatoes, beans, Italian seasoning and black pepper; set aside. Cut tops off of peppers remove seeds and membranes. Cook in boiling water for 5 mins. Drain upside down on paper towels Coat a large non-stick skillet with cooking spray. Add beef and shallots; cook over medium heat for 5 mins. or until beef is browned. Drain the fat off of the meat. Add beef mixture to couscous mixture. Stuff the peppers, top with feta cheese. Bake 10 to 15 mins. or until peppers are tender and cheese is melted.

    Flavor = 5* But, recipe really p0orly written! I'm a retird chef, so it wasn't a case of being naive, just didn't read the instructions thoroughly enough. Great flavors tho I will add some heat of some sort next time. Thanks for the recipe. Jean  @ achefsjourney.com
